Kaldereta is a rich and hearty Filipino recipe that stands out as a favorite during special occasions and family gatherings. This traditional stew is made with tender meat—typically beef, goat, or pork—slow-cooked in a flavorful tomato-based sauce. The dish is packed with layers of flavor, thanks to a combination of savory liver spread, tangy tomato sauce, and an array of vegetables such as potatoes, carrots, bell peppers, and sometimes green peas. To add a touch of heat, chili peppers are often included, making Kaldereta a slightly spicy yet incredibly satisfying dish.

This Filipino recipe is known for its rich and complex flavors, with the addition of ingredients like olives or cheese in some variations, giving it a unique twist. Kaldereta is typically served with steamed white rice, making it a filling and comforting meal. It’s perfect for those who enjoy bold flavors and slow-cooked dishes that get better with time. Whether you’re exploring traditional Filipino recipes or looking for a new dish to impress guests, Kaldereta is a must-try for anyone seeking a taste of Filipino culinary heritage.

    Directions

    Step1

In a large pot or deep pan, heat the oil over medium heat. Sauté the garlic and onion until the onions become translucent. Add the beef cubes and cook until they are browned on all sides, about 5-7 minutes.

    Step2

Pour in the water or beef broth and add the bay leaves. Bring to a boil, then lower the heat and let it simmer for about 1.5 to 2 hours, or until the beef is tender. If using a pressure cooker, this can take about 45 minutes.

    Step3

Once the beef is tender, stir in the tomato sauce, tomato paste, liver spread, and soy sauce. Let it simmer for another 15-20 minutes, allowing the sauce to thicken and the flavors to meld together.

    Step4

Add the potatoes, carrots, and green peas. Simmer for another 10 minutes or until the vegetables are cooked through.

    Step5

Add the red and green bell peppers and cook for an additional 5 minutes. Adjust the seasoning with salt, pepper, and vinegar (if using). If you like your Kaldereta spicy, add some chopped bird’s eye chili at this stage. For a richer flavor, you can also add grated cheese on top and let it melt into the sauce. Serve the Kaldereta hot with steamed rice. The rich and hearty flavors make it perfect for special occasions or family meals.
