    Directions

    Step1

Start by heating the cooking oil in a large pan over medium heat. Once hot, add the pork belly slices and cook until lightly browned and the fat is rendered. This should take around 5-7 minutes.

    Step2

Push the pork belly to one side of the pan. In the same pan, add minced garlic and chopped onions. Sauté until fragrant and the onions become translucent. Add oyster sauce, soy sauce, fish sauce, and sugar to the pork. Stir to coat the pork evenly with the sauces and seasonings.

    Step3

Pour in 1 cup of water or pork broth and let the mixture simmer for about 20 minutes or until the pork becomes tender and the sauce has slightly thickened. Stir occasionally to prevent sticking. Once the pork is tender, gently add the boiled quail eggs. Stir carefully so that the eggs do not break. Let the dish simmer for another 5 minutes, allowing the quail eggs to absorb the sauce.

    Step4

Taste the dish and adjust the seasoning with additional soy sauce or fish sauce if needed. Add ground black pepper to taste. Optionally, garnish with chopped green onions before serving. Serve with steamed rice for a complete meal.
