Directions
In a large bowl, combine the pork chunks with pineapple juice, soy sauce, brown sugar, bay leaves, and peppercorns. Mix well and marinate for at least 1 hour, or overnight for better flavor.
In a large pot, heat vegetable oil over medium heat. Sauté the onion and garlic until fragrant. Add the marinated pork to the pot and sear on all sides until lightly browned. Pour in the remaining marinade and bring to a boil.
Reduce the heat, cover, and let it simmer for about 45 minutes to 1 hour, or until the pork is tender. If the liquid reduces too much, add water as needed. Add the pineapple chunks and cook for an additional 5-10 minutes to combine the flavors.
Adjust seasoning with salt and pepper. Serve hot with steamed rice.
