Prepare the blood: Cut the coagulated chicken blood into small rectangular blocks, about the size of a bite (1 inch wide). These will be grilled on skewers later.
Make the marinade: In a bowl, combine soy sauce, vinegar, garlic, sugar (optional), salt, and black pepper. Stir well to combine.
Marinate the Blood: Place the chicken blood cubes into the marinade and let it sit for at least 30 minutes. This allows the flavors to absorb into the blood.
