    Directions

    Step1

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a baking dish (9x9 inches) with butter or line it with parchment paper.

    Step2

Mix Cake Ingredients: In a large mixing bowl, combine the grated cassava, coconut milk, condensed milk, sugar, evaporated milk, melted butter, and grated young coconut (if using). Mix well until everything is fully incorporated.

    Step3

Bake the Cake: Pour the mixture into the greased baking dish and spread it evenly. Bake in the preheated oven for about 45–50 minutes or until the cake is set and slightly golden on top. Check by inserting a toothpick into the center; it should come out clean.

    Step4

Preparing the Custard Topping: While the cake is baking, prepare the custard topping by whisking together the condensed milk, coconut milk, and egg yolks in a bowl. Stir until smooth.

    Step5

Once the cake is set, remove it from the oven. Pour the custard topping over the baked cassava cake and spread evenly. You can sprinkle grated cheese on top for added flavor (optional). Now, Return the cake to the oven and bake for another 20–25 minutes or until the topping turns a light golden brown. If needed, broil for an additional 2–3 minutes to achieve a darker color.

    Step6

Cool and Slice: Allow the cake to cool completely before slicing into squares. Serve at room temperature or chilled.
