Directions
Preheat the oven to 350°F (175°C). Grease a muffin pan or line it with cupcake liners.
Mix dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
Prepare wet ingredients: In a separate bowl, beat the eggs and add the evaporated milk, water, melted butter, and vanilla extract. If you want the characteristic yellow hue of Kababayan, add a few drops of yellow food coloring. Then, slowly add the wet mixture to the dry ingredients. Stir gently until just combined. Be careful not to overmix to keep the muffins light and fluffy.
Fill the muffin pans: Pour the batter into the prepared muffin pan, filling each about three-quarters full.
Bake the Kababayan: Place the muffin tray in the oven and bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
Cool and serve: Remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
