Directions
In a bowl, combine the diced chicken with soy sauce, salt, and pepper. Let it marinate for about 15 minutes.
Heat vegetable oil in a large pan or wok over medium-high heat. Sauté garlic and onion until fragrant. Add the marinated chicken to the pan and stir-fry until cooked through and slightly browned. Stir in the bell pepper and dried chili peppers. Cook for about 3-4 minutes until the bell pepper is tender.
Add oyster sauce, rice vinegar, and peanuts. Mix well. Pour in the cornstarch mixture and stir until the sauce thickens. Adjust seasoning if needed.
