Directions
In a bowl, combine soy sauce, calamansi juice, minced garlic, and ground black pepper. Add the pork chops and marinate for at least 30 minutes.
Heat vegetable oil in a large skillet over medium-high heat. Remove the pork chops from the marinade (reserve the marinade) and sear them in the skillet for about 4-5 minutes on each side, or until browned. Remove and set aside. In the same skillet, sauté the sliced onion until translucent. If using, add the mushrooms and cook until soft.
Pour in the reserved marinade and beef broth (or water). Bring to a simmer. Return the pork chops to the skillet, cover, and let them cook for an additional 10-15 minutes or until cooked through, adjusting seasoning with salt and pepper as needed.
Garnish with chopped green onions and serve hot with steamed rice.
