Directions
Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
In a large pan over medium heat, add the butter and olive oil. Once melted, add the garlic and onions, sautéing until fragrant and soft (about 2-3 minutes). Add the sliced mushrooms to the pan and sauté for about 5-7 minutes, until browned and softened. Season with salt and pepper to taste.
Pour the heavy cream into the pan, stirring well. Let it simmer for 3-5 minutes until the sauce thickens slightly. Stir in the grated Parmesan cheese until melted and fully incorporated. Drizzle the truffle oil into the sauce, stirring to combine. Taste and adjust the amount of truffle oil based on your preference. For extra flavor, you can also add a small amount of truffle paste.
Add the cooked pasta to the sauce, tossing to coat evenly. If the sauce is too thick, add some of the reserved pasta water to achieve your desired consistency.
Serve the pasta immediately, garnished with fresh parsley and extra grated Parmesan cheese on top.
